What are the needed steps to correctly change the domain name of a running OTRS site?

Possible other places to check that aren't OTRS required but you may have....
If your templates, etc., did not all consistently use the <OTRS_CONFIG_FQDN> as their location, e.g. in signatures if people have hard coded a domain.
If you use a local email server and have done so by including the host name in email, this may require email address changes (i.e. not so much for otrs as email).
If you have a https certificate.
If you have any redirects or .htaccess files for apache2 (or whatever), e.g. a lot of people might have redirects for shortened URL's to send the user to the full URL. Same if you are in a multi-tenant environment sharing IP's where the header name is used to select otrs not pure IP (but you'd almost certainly know if you did this).
Bear in mind people with old emails, bookmarks, etc. will of course break. If the old FQDN is no longer used (for something else), consider putting in a CNAME so people reach the right place (though of course this delays getting them all to fix those shortcuts).
Searching ./Kernel/Config.pm and ./Kernel/Config/FilesZZZAuto.pm for any uses of the domain other than FQDN.
