Is there a way that "customer user" field will not be mandatory? Creating phone tickets
or that "customer user" field accept simple text in "new phone ticket" page?
Because right now is only accepting emails.

Hi,
you can disable MX Checker and checking the syntax of correct e-mail address in sysconfig. Core Ticket somewhere.
Then you can type anything in the From Field.

For MX Checker do you mean a field called CheckMXRecord? I attached a photo of it. I changed it to No.
I'm not able to unchecked it but I set in no, however it doesn't worked.
Is still mandatory.
I have installed KIXCore and KIX4OTRS, I don't know if that is the reason why is disable to unchecked it. or is not the field you're talking about.
