Can I reduce the number of fields/processes to the change management?
I don't have a testing environment so i wanted to ask before I delete a few.
I included a screenshot of the state changes configuration:

Well, as far as you're not sure you understood the sense of ITIL-compliant change management, you should *not* do.
OTRS implemented a kind of state machine, in order to integrate the logic of CM and the different stages:

Maybe offtopic:
You cannot make (ITIL-compliant) change management easier, just deleting a couple of states. Maybe you should read this blog entry; an interesting point of view and a good approach (20 clicks):

In my opinion, don't try to think like a technician when it comes to Change Management. Managers think about Business Impact Analysis, Return on Invest and all these things. Define company wide standards (see above) to create less insanity than possible.
